凤梨酥 (Pineapple tart)

Pineapple filling
Ingredient:
2 Pineapple
1/2 lime
sugar (based on preference)

Method:

  1. Peel the pineapple and cut into small pieces. Cut the lime into small pieces. Add in sugar and in water. The water level must can cover the pineapple. 
  2. Cook with medium-low heat. Need cook at least 4 hours. Pineapple become soft and the sryup become thick.
  3. Pour them into a soucepan and cook till thickened. 
  4. For jam: not need cook till dry
  5. For filling: must cook till dry 
PS: to keep longer, the pineapple mixture need cook as dry as possible.


Pineapple tart
Ingredient A
125g butter
30g icing sugar
140g plain flour
40g corn flour
3 tablespoon milk powder
2 egg yolks

Method:

  1. Beat butter till soft and add in icing sugar. Mix well. Then add in flour (plain and corn) and milk powder.
  2. Mix the dough with egg yolks. Knead the dough to form dough. Scale dough at 10g each.
  3. Flatten mini dough and wrap in some pineapple filling.
  4. Glaze the surfaces with egg yolks.
  5. Place on lined baking trays and bake in a preheated oven at 170 degree Celsius for 40 minutes.
PS: can add in some cheese powder into dough, then the cookies will have cheese favor.
