The filling is same as traditional mooncake. Snow skin mooncake is a non-bake mooncake and it must be finished in 3 days.
Ingredient for skin
Glutinous rice flour 50g
Rice flour 40g
Flour 20g
Fruit puree 70ml
Sugar 30g
Oil 10ml

Fruit Puree making:
- Choice any types of fruits like mango, strawberry, apple, dragon fruit and ets
- Cut into cubes, add few ml of water and blend it.
- Filter it. Throw the exceeded water.
- Mixed all dry ingredients together.
- Mixed the wet ingredients well.
- Mixed the wet and dry ingredients together.
- Steam for 30 to 45 minutes.
- Cut into small pieces, roll into small ball and flatten it. (P.S. it is sticky and suggested to use cooked wheat strach flour to do this step)
- Add the filling paste and drop it.
- Covered the paste in the flatten dough, and roll the mooncake into a ball.
- Press the mooncake into a mold. Take it out and really to eat.
I prepared two colored dough.
One dough used butterfly pea flower (蓝花) mixed with apple puree. Knead the dough before steam.
Another dough used M&S Strawberry and Raspberry tea water (red color) blended with apple
