Snow Skin Mooncake 冰皮月饼


The filling is same as traditional mooncake. Snow skin mooncake is a non-bake mooncake and it must be finished in 3 days. 

Ingredient for skin
Glutinous rice flour 50g
Rice flour 40g
Flour 20g
Fruit puree 70ml 
Sugar 30g
Oil 10ml

Fruit Puree making:
  1. Choice any types of fruits like mango, strawberry, apple, dragon fruit and ets
  2. Cut into cubes, add few ml of water and blend it.
  3. Filter it. Throw the exceeded water.
Dough preparation:
  1. Mixed all dry ingredients together.
  2. Mixed the wet ingredients well.
  3. Mixed the wet and dry ingredients together.
  4. Steam for 30 to 45 minutes. 
  5. Cut into small pieces, roll into small ball and flatten it. (P.S. it is sticky and suggested to use cooked wheat strach flour to do this step)
  6. Add the filling paste and drop it.
  7. Covered the paste in the flatten dough, and roll the mooncake into a ball.
  8. Press the mooncake into a mold. Take it out and  really to eat.




I prepared two colored dough. 
One dough used butterfly pea flower (蓝花) mixed with apple puree. Knead the dough before steam.
Another dough used M&S Strawberry and Raspberry tea water (red color) blended with apple
