Traditional Mooncake 广式月饼

Mooncakes are the traditional Chinese pastries and always made during the Mid-Autumn Festival. It can divide into two processes: 1) making the filling and 2) preparing the dough.

Mooncake filling preparing

Lotus paste filling:

lotus seed180g
sugar 120g
vegetable oil 80g
glutinous rice flour 1 teaspoon

  1. Soaked the dried lotus seed (unskinned and take out the green stem) in water. Boiled them in slow cooker overnight
  2. Blended the lotus seed into smooth paste.
  3. Melted butter and vegetable oil together and  mix with the smooth paste
  4. Cooked until the paste does not stick on the pan. (It may need few hours)
  5. Added glutinous rice flour into the paste and the paste is really.
Mung bean paste filling:
The preparation is much easier compared to lotus paste filling.

Mung bean 150g
sugar 70g ( base on preference)
vegetable oil 3 tablespoon 
glutinous rice flour 1 teaspoon

  1. Used rice cooker to cook the mung beans. The water level must cover the beans.
  2. Blended the mung beans into paste. The paste must filter before cook to ensure the paste is smooth.
  3. Cooked the paste with vegetable oil and sugar. The time used to cook this paste is shorter compared to lotus beans paste.
  4. Lastly, add in glutinous flour.
The ready mung bean paste

Red bean paste filling:
The preparation is same as mung bean filling but it is suggested to cook the red beans in slow cooker.

Purple sweet potato paste filling:
purple sweet potato 100g
sugar 30g (based on preference)
butter 1 tablespoon
glutinous rice flour 1 teaspoon
milk powder 1 tablespoon
  1. Cut sweet potato into cubes and cooked with water until soft
  2. Blended into paste and filter the paste
  3. Melted butter in a pan and add in sugar, then cook the paste till no sticky.
  4. Add in glutinous flour and milk powder and mixed well with the paste.

Dough
a. Alkaline solution (枧水)1/2 teaspoon to allow the dough stretchable
b. Vegetable oil 80g
c. Golden syrup 180g
d. Flour 300g

  1. Mixed all the ingredient well. (a-->b--> c-->d)
  2. Rest the dough at least 1 hour. (can more than one hour)
Mooncake making:
  1. Preheat the oven with 180 degree Celsius.
  2. Separated the dough into small parts (40g each). Roll each of those into small ball and flatten it.
  3. Prepared 40g of paste and roll into small ball. It also can prepare two layers of filling like 10g of lotus seed paste covered by 30g of red bean paste.
  4. Covered the paste in the flatten dough, and roll the mooncake into a ball.
  5. Press the mooncake into a mold. Take it out and put on baking tray.
  6. Put the tray into the oven for  5 to10 minutes.
  7. Take it out and brush the mooncake with egg wash after cooled down. ( This step can repeat two times)
  8. Put them back into the oven and bake till become golden brown.
